You will need:
1 C. brown rice
Salt and pepper
1 lb. or ½ head of Napa cabbage (thinly sliced)
1 lb carrots (grated)
½ C. mint leaves (fresh)
¼ C. lime juice
2 tbs. grape seed oil
4 Salmon filets (6 oz. each)
2 tsp. curry powder
Directions
Boil 2 cups water in large saucepan, then add brown rice. Add salt and pepper to taste, cover, then lower heat to medium-low. Cook 30-35 minutes or until tender.
In large bowl, mix cabbage, carrots, mint leaves, lime juice and grape seed oil, then add salt and pepper to taste.
When rice is 10 minutes from being tender, prepare broiler. Place rack 4 inches from heat. Line baking sheet with foil before placing salmon on sheet. Rub curry powder onto salmon and add salt and pepper to taste. Broil for 6-8 minutes or until cooked through.
Serve with rice, cabbage salad, and salmon. Enjoy!
